Shifting to Summer
Dear Kathie,
The word 'summer' evokes a different feeling and a
different pace. Summer encourages a change of
routine, vacations, entertaining outdoors, and
relaxing more. The next 3 issues will be short and
simple, encouraging you to shift your focus this
summer to one of simplicity. Do less…enjoy more!
Make Ahead Meal
Summer Soup
My favorite summer soup recipe guarantees no-
thinking, quick lunches or dinners and healthier
alternatives for de-cluttering body, heart, mind and
spirit.
Gazpacho: 3 large tomatoes chopped, 1
green bell pepper chopped, 1 cucumber peeled and
chopped, 1 cup chopped celery, ½ cup chopped
green onion, 2 avocados chopped, 4 cups tomato
juice, 5 tablespoons red wine vinegar, 4 tablespoons
olive oil, 2 teaspoons salt, ½ teaspoon black pepper.
Combine all ingredients in large non-metallic bowl and
chill over night. Optional: Serve with a dollop of
sour cream and croutons. –Colorado Cache

Recipe for Summer Feng Shui
Enjoy Nature
Balance and harmony with nature are essential in
creating good Feng Shui (which literally means
wind and water). This summer spend
time outdoors and bring the outdoors in. Shift gears
and shift the energy.
- Move 3 pieces of furniture
- Open your front door to Mrs. Ch'i every morning.
Invite her in for the day.
- Eat at least one of your meals out doors
- Grow a vegetable or floral garden or visit amazing
gardens in your city
- Repot your house plants and decorate with fresh
flowers
