Make Ahead Meal
Summer Soup
tomato My favorite summer soup recipe guarantees no- thinking, quick lunches or dinners and healthier alternatives for de-cluttering body, heart, mind and spirit.

Gazpacho: 3 large tomatoes chopped, 1 green bell pepper chopped, 1 cucumber peeled and chopped, 1 cup chopped celery, ½ cup chopped green onion, 2 avocados chopped, 4 cups tomato juice, 5 tablespoons red wine vinegar, 4 tablespoons olive oil, 2 teaspoons salt, ½ teaspoon black pepper. Combine all ingredients in large non-metallic bowl and chill over night. Optional: Serve with a dollop of sour cream and croutons. –Colorado Cache Cookbook, The Junior League of Denver, page 256.
